An idea I saw on a tiktok video (I can't find the link...):
Students can make their own "journal" about anything they want/interested in (in English obviously).They are encouraged to do "scrap-booking" or other creative stuff.They do research on their topics and need to note the specific vocabulary.The goal behind it is to learn English with something they are interested in. they can watch videos in English about it and learn blog and other stuff.The journal shouldn't be evaluate with a note(should not be a punitive task) but has to be corrected by the teacher.
